The local "Longshu" varieties, cultivated for over 200 years, are ideal for both fresh consumption (creamy when cooked) and processing into starch, chips, and flour. With a planting area exceeding 3 million mu and annual output of 5+ million tons, Dingxi potatoes are a cornerstone of rural economy, blending ecological farming with rich heritage.
